Banana nut bread

banana bread

I love bananas! I love them more when they are ripe, because that means it is time to make banana bread! This recipe is easy and it is gluten free! Yay!

You will need:

2 cups of almond flour
1 teaspoon of baking soda
1/4 teaspoon of salt
3 eggs
4 medium bananas
1 cup of sugar
1/2 cup of unsweetened applesauce
1/3 cup of canola oil
1 teaspoon of vanilla extract
1/2 cup of chopped walnuts

Directions:

In a large bowl, combine the flour, baking soda and salt. In a small bowl, whisk the eggs, bananas, sugar, applesauce, oil and vanilla. Stir into dry ingredients just until moistened. Get your baking pan ready by coating it with baking spray. Add the ingredients into the pan, sprinkle some walnuts, place in the oven and let it bake for about 40 minutes (or until toothpick comes out clean).

Note: My banana bread turned brown within 25 mins of baking therefore I covered it with tin foil so that the center would bake faster!
